Something I've explored more since practicing Voodoo is cooking. Most foods offered to the Lwa are simple and inexpensive. If I'm doing a service, I'll make enough for my own meal as well. I also try to conserve and use as much as possible, rather than throwing out things. Here is a recipe that includes greens and black-eyed peas, a favorite of Sobo.
2 strips of bacon, cut into small pieces. Fry and do not pour off the grease.
1 small onion or half an onion. Dice and simmer with the bacon.
2 or 3 celery stalks. Dice and simmer as above.
Cube a few potatoes (white, sweet, or a mix) and boil them.
Once the onion & celery are cooked, add the potatoes.
Add a can or a package of frozen black eyed peas. If you use dry, you'll need to soak them ahead of time.
Add some stock or water, more if you want it to be more like soup.
Cut or tear greens (collard, spinach, whatever you like) into pieces. I use about 5 fresh collard leaves. Lay them on top of the mixture so they can steam and cover the pan.
Season as you like (red pepper is always good).
You may notice my portions are not exact — try different things and see what you like. Maybe substitute rice for the potatoes.
