Autumn is almost here! Soon the weather will begin cooling down and the leaves will start changing colors. I love this time of year because I can start baking all my Fall recipes again! Here's one of my very favorite cookie recipes to make in the Fall:
Pumpkin Chocolate Chip Cookies
- 1 cup unsalted butter, softened
- 1 cup white sugar
- 1 cup light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup canned pumpkin puree
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ginger
- ¼ teaspoon nutmeg
- ¼ teaspoon cloves
- 2 cups (12 ounces) milk chocolate chips
Heat oven to 350 degrees. Spray cookie sheets with non-stick spray. Using a mixer, beat butter until smooth. Beat in white and brown sugars a little at a time until the mixture is light and fluffy. Beat in eggs one at a time and then mix in vanilla and pumpkin puree.
In a large bowl whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Slowly beat the flour mixture into the batter in thirds. Stir in the chocolate chips. Scoop cookie dough by heaping tablespoons onto cookie sheets.
Bake 15-20 minutes or until cookies are browned around the edges. Let rest for two minutes then cool on wire racks. Enjoy!
