New Recipe ;-)...

I found this last night while searching for a new offering recipe...Not so sure how I feel about the pineapple being in this but I am sure it wouldn't hurt to leave it out and add something else if you wanted to ;-). Hope everyone had an awesome month.

White Chocolate Macaroons

4 oz. white chocolate, chopped
1 cup sugar
One half tsp. ground ginger
1 tsp. ground cinnamon
4 large egg whites
2 cups flaked coconut
One third cup macadamia nuts, chopped
Two thirds cup dried pineapple, chopped

Melt white chocolate in a glass bowl in the microwave, being careful not to scorch. Combine sugar, ginger and cinnamon and stir. Beat egg whites with a mixer until foamy. Slowly add sugar mixture and continue beating for several minutes until sugar is dissolved. Add melted white chocolate, coconut, nuts and pineapple and stir. Drop tablespoonfuls onto a baking sheet covered with parchment paper and bake for about 15 minutes or until slightly browned.

Quotes for Staying Positive

Hi all. I hope you all had a great week. Sorry I was so quiet this week. I have had some internet connection issues. Every day I spend some time reading positive quotes. Today I am going to share a few of the great ones I have read lately. Some quotes are great for picking up your spirit when you are down and waiting for spellwork results ;-). Anything that helps me stay positive is a great thing in my opinion. These are all about hanging in there, which I know at times we all need help with. Spellwork is not a magic wand, it is work. Coconut Shortbread

Coconut Shortbread

1 cup butter, softened
1/4 cup confectioners' sugar
1/4 cup granulated sugar
1 tsp. vanilla extract
2 cups all-purpose flour
1 cup flaked coconut
 
Heat oven to 350 degrees.
In a large bowl, using an electric mixer on medium speed, cream together butter, sugars and vanilla until smooth. Add flour and coconut, mixing until a ball forms. Pat dough into an ungreased 10-inch spring form pan.
Place pan in oven and bake for 20 to 25 minutes, or until light golden brown. Remove from oven and cool slightly. Remove outer ring from pan. Cut into 16 wedges while still warm.

A little side note about this recipe, I am thinking a round cake pan would also work or you could just use a cookie sheet and pat the dough into a circle. Also to make this an even better offering you could dip one edge of the wedge into melted chocolate ;-). If anyone tries this recipe leave me a comment and let me know how they turn out for you. I plan to cook these my self just as soon as I can make it to the store and get more butter. Have a great day. Love to you all.

Happy Saint Patrick's Day

     Hello all I just wanted to wish you all a great day. Today was such a warm beautiful day. After the cold of last week it was a very pleasant change and shows that spring should soon be here. The flowers in my flower bed are starting to come up. I can't wait to see the lovely colors of them all. Now is also the time I am planning what else to grow. My mint is doing great and taking over the back flower bed even as I type this, thanks to all the rain we had here last week ;-). I found a couple of Irish Blessings to share with you all today since it is Saint Patrick's Day. I hope you enjoy them. Have a very awesome rest of today.

Coconut Candy

Today I was looking for a recipe and came across this one and it sounds so easy. I think I may try these with milk chocolate too. After all I always like to have coconut candy on hand ;-).

Coconut Haystacks
Prep Time: 10 minutes
Ingredients:
2 cups shredded, sweetened coconut
7 ounces semi-sweet chocolate
Preparation:
1. Prepare a baking sheet by lining it with aluminum foil. Preheat the oven to 325 degrees.

2. Place the coconut in a pie tin or small baking pan, and toast it in the oven until golden brown. The secret to good toasted coconut is consistent browning, so be sure to stir it every 2 minutes until it is an even, light golden color. It will probably take 8-10 minutes, but monitor your coconut carefully.

3. While the coconut is toasting, place the chocolate in a large microwave-safe bowl. Microwave it until it is melted, stirring every 45 seconds.

4. Once coconut is toasted and chocolate is melted, stir the coconut into the chocolate, mixing until coconut is entirely coated with chocolate.

5. Using a small teaspoon, drop small spoonfuls of the candy onto the prepared sheet.

6. Once all candy has been formed, refrigerate for 30 minutes, until the chocolate is set.

Take Time For Your Self

Hi all. I hope everyone is having a great Friday. I have been thinking alot about how I always seem to forget to take a little time each day for my self, so often I am to wrapped up in everything that is going on around me. So starting today my plan is to take at least ten minutes a day doing something just for me. For me that will probably be sitting down with a good book for that short time. For someone else it might be something they love doing but don't take the time to do on a regular basis. Anyways try and remember each day to do that little something for your self. It really can help when you are waiting for results from spell work or just need a tiny break from your day to day on going things.
